  1. This one is from my MIL. We all Love it Love it Love it!

    Banana Cake (or muffins)

    1 c. sugar

    1/2 c. butter

    2 eggs (beaten)

    1 c. bananas (about 3 large ones mashed)

    4 tbs milk OR 1/4 cup

    1 1/2 c. flour

    1 tsp baking soda

    1 tsp baking powder

    1 tsp vanilla

    Preheat oven to 350

    Cream sugar, butter, eggs, bananas, milk and vanilla together. Add dry ingredients and mix thoroughly. Pour into pan.

    Place on middle rack.

    Bundt: 40 minutes

    Muffins: 25 minutes

    2 8" cake pans: 30-45 minutes

  2. 2 tbsp olive oil

    2 medium onions, chopped

    2 cups chopped carrots

    2 cloves garlic, chopped

    2 stalks celery, chopped

    1 (9 oz.) box frozen cut green beans

    7 cups beef broth

    1 (14.5 oz) can stewed tomatoes

    1 cup elbow macaroni

    1 (15 oz) can Great Northern beans, drained

    2 tsp dried basil

    1/2 cup grated Parmesean cheese

    1. Heat oil in a large pot over medium-high heat; add onions, carrots, garlic and celery. Cook, stirring occasionally, until carrots are slightly soft, about 10 minutes.

    2. Add green beans, broth and tomatoes to pot. Bring soup to a boil. Reduce heat. Simmer, covered, for 30 minutes.

    3. Add macaroni, beans and basil. Simmer, covered, until macaroni is tender, about 10 minutes.

    4. Ladle soup into bowls. Top each serving with Parmesean.

    **You can make this soup up to 24 hours ahead and refrigerate. OR freeze the soup for up to 6 months.

    We love this recipe...and we usually don't use the beans.
