Crockpot- White Chicken Chili in Soups, Sauces Stews Posted 9 Nov 2007 · Report post Crockpot White Chicken Chili 1 pound navy beans, soaked 1 medium onion, chopped 3 cloves minced garlic 8 ounces chopped green chiles 2 teaspoons ground cumin 1 teaspoon oregano 1 1/2 teaspoons cayenne pepper 1/2 teaspoon salt 2 pounds boneless skinless chicken breast halves 14 ounces chicken broth 1 cup water Put beans in medium pan and cover with water. Bring to a boil; reduce heat and allow to simmer 20 minutes. Discard water. Cut chicken into 1-inch pieces and brown if desired. Put all ingredients in crock-pot. Stir to mix thoroughly. Cover. Cook on low 10-12 hours or high 5-6 hours. Serves 6-8 ** We had this last night, it was good, even better when I just now had it for lunch! It was a little spicy for the boys, but we loved it, so you might want to cut back a little on the cayanne and cumin for the kids and add more later. I also added a little bit of dried cilantro (didn't have any fresh). I used one bag of dry Northern beans (and cut back on the chicken) and put half in a ziplock bag in the freezer with all of the other ingredients except broth and water so all I have another quick meal to throw in the crockpot later.
